五味八珍のらーめんが新しくなりました。醤油のかえしを見直し、具を見直し、野菜増量、味を見直しコクと旨みを増し、器を見直し、全てに美味しく生まれ変わりました。

Commitment to Dashi (Broth)

The base of our dashi is made from three types of seafood: bonito, dried sardines, and flying fish. The katsuobushi (dried bonito flakes) bring a rich and fragrant aroma. We have taken great care to extract a broth that is robust yet free from any fishy smell. Achieving this balance required extensive research and time.

Our shoyu (soy sauce) soup is a delightful blend of sweet and salty flavors with a bold umami taste from the katsuobushi. The soy sauce is sharp yet mellow, without any harshness. We blend three carefully selected types of soy sauce and enhance the depth and richness of the flavor by adding a secret pork extract prepared using a special method.

Perfect Harmony Between Soup and House-Made Noodles

The combination of shoyu tare (seasoning base) and chicken stock creates a premium triple soup that fully captures the umami of seafood, pork, and chicken. Just one sip will let you experience its refined taste.

Our homemade straight noodles, boasting a chewy and bouncy texture, pair perfectly with the soup. The noodles and broth intertwine just the right amount, complementing and enhancing each other for a well-balanced finish.

Beautifully Presented with Thoughtful Garnishing

This shoyu ramen is entirely different from any previous version at GomiHattin. Each topping has been carefully selected: char siu (braised pork), bamboo shoots, soft-boiled marinated egg, scallions, and nori (seaweed). Every ingredient is meticulously arranged, ensuring that just by looking at it, customers will be drawn in with delight.

GomiHattin specializes in ankake (thickened sauce) dishes, and among them, our Gomoku Ramen is an all-time favorite.

The word “Gomoku” signifies a variety of ingredients, and we have taken extreme care to ensure that each ingredient stands out in both taste and texture.

Juicy, flavorful pork and tender, plump squid—both enhanced by a traditional Chinese cooking technique called “Chian (漿)”, which locks in moisture and maximizes flavor.

Our glossy, thick ankake sauce coats the colorful vegetables, keeping them hot while maintaining a crisp texture. This is achieved through the “Aburadoshi (油通し)” technique, where ingredients are lightly blanched in hot oil before stir-frying. We have also increased the volume of toppings, adding 50g more Chinese cabbage to create an even more luxurious ankake experience.

Each ingredient contributes to the exquisite taste and presentation, living up to the name “Gomoku” in every bite.

Alongside Gomoku Ramen, Vegetable Tanmen (formerly “Vegetable Ramen”) is one of our flagship dishes. Maintaining the same great taste for years, this dish has earned a loyal following.

Salt-based soups are particularly challenging to perfect—they can’t rely on excessive seasoning. If too light, they feel lacking, but making them too rich isn’t the solution either. We faced many challenges in refining this balance, but we are confident that we have achieved the perfect taste.

Our broth is built on a blend of two special salts, complemented by two types of blended soy sauce for added depth. A white soup base enhances the richness, while ginger and garlic provide an irresistible aroma that stimulates the appetite.

As the main attraction of this dish, cabbage takes center stage, with 50g more added than before. We ensure that the natural sweetness of the cabbage shines through, rather than relying solely on seasoning.

We incorporate traditional Chinese techniques to prepare ingredients like pork and squid.

The “Chian (漿)” method coats ingredients in a thin batter, sealing in the natural umami and ensuring a tender, plump texture. This technique enhances the presence of each ingredient, contributing to both the dish’s appearance and flavor.

Another technique rarely used in home cooking is “Aburadoshi (油通し)”, where vegetables are lightly blanched in hot oil before being stir-fried.
